Project: Innovation Hub on Rice Fortification-IIT Kharagpur

Audits of fortified rice kernel (FRK) manufacturing plants:
- Visited the nationwide FRK manufacturing plant and proposed solutions to improve the quality of FRK, process optimization techniques, and necessary machinery information for better output.
- Provided information about government guidelines on rice fortification and ways to adopt them for food safety.
Design of a continuous FRK manufacturing unit:
- Developing a computer-aided design (CAD) for a continuous FRK manufacturing unit.
- Simulating the various processes of FRK manufacturing like grinding, mixing, extrusion, and drying using ANSYS and EDEM.
- Optimizing the process for various design configurations.

Project: Fortified Rice Noodles: Formulation and Manufacturing Technology
Supervisor: Prof. H N Mishra
Natural forticants investigation for food-to-food fortification
- Iron, folic acid and vitamin B12 rich natural forticants were investigated and a novel formulation for fortification in rice noodles were developed.
- Linear programming code were developed in MATLAB for 100 + combinations.
Extrusion optimization using multi-objective genetic algorithm (MOGA)
- Implemented MOGA in finding optimal extrusion processing conditions and compared with graphical multiresponse optimization (GMOT) outcomes for optimal quality of fortified rice noodles (FRN) with maximum retention of micronutrients.
Drying optimization and sorption analysis
- Investigated five different drying technology viz. hot air, pulse vacuum, microwave, forced air and freeze drying for FRN.
- Applied drying kinetics using hyperparameter optimization-based ML and thin layer drying models.
- Developed optimal drying conditions using MOGA. Analysed sorption behaviour of FRN with ML and empirical equation-based modelling

Project: Development of process technology for instant soluble skim milk powder (SMP) tablets
Supervisor: Prof. H N Mishra
Die design for skim milk powder (SMP) tablet manufacturing
- Designed tablet die and analysed the stress behaviour with finite element analysis.
- Fabricated the die using advance wire cut technology for precise development.
Process optimization of SMP tablet manufacturing using GMOT
- Optimized novel processing condition for skim milk powder (SMP) tablet development using GMOT based on response surface methodology.
- Applied SMP tablet technology for sugar-added SMP tablet development.
